食材
- 1 千克南瓜,去皮,去籽,果肉切成7厘米/2¾英寸的块

- 1 茶匙香菜籽粉
- 1 茶匙孜然粉
- 1洋葱,粗切
- 3番茄,切成四块
- 6-8 瓣蒜拍去皮
- 400 毫升罐装椰奶
- 1现磨黑胡椒
- 4 汤匙植物油
- 1 茶匙孜然
- 1 茶匙黑芥末籽
- 4-6 瓣蒜片
- 1-3青辣椒,薄片
制作步骤
将烤箱预热至180°C/160°C风扇/4档。将南瓜抹上油,撒上盐、辣椒粉、香菜粉和孜然粉。
将南瓜与洋葱、番茄和大蒜一起放入一个大的烤盘中。烤1-1.5小时,每30分钟翻动一次,以确保所有食材都变软并焦糖化(南瓜的烹饪时间差异很大,含水量越多,烹饪时间越长)。
蔬菜变软后,将烤盘中的所有食材倒入食品料理机中,与椰奶一起搅拌至顺滑。倒入一个大汤锅或砂锅中保温。用盐和胡椒调味。如果需要稀释汤,可以加少许水。
