作り方
スタンドミキサーにドゥフックを取り付け、全粒粉、挽いた亜麻仁、ごま、ターメリック、塩小さじ¾を低速で混ぜ合わせます。水を少しずつ加え、生地が滑らかで弾力が出るまで7〜9分間こねます。生地を軽く打ち粉をした台に取り出し、手で滑らかで丸いボール状になるまでこねます。生地を4等分し、油を塗ってラップで覆います。室温で1時間休ませます。
オーブンのラックを上段中央と下段中央の位置に調整し、オーブンを華氏400度(摂氏200度)に予熱します。生地1枚ずつ(残りの生地はラップで覆っておく)を、パーチメント紙2枚で挟んで、厚さ約⅛インチ(約3mm)の15×11インチ(約38×28cm)の長方形に伸ばします。上のパーチメント紙をはがし、生地の乗ったパーチメント紙をベーキングシートに移します。2枚目の生地と2枚目のベーキングシートでも同様に繰り返します。
フォークで生地に2インチ間隔で穴を開けます。生地に溶き卵を塗り、それぞれにチアシード小さじ1½、粗塩小さじ½、お好みでコショウを振りかけます。種と調味料を軽く押さえて、なじませます。
クラッカーが黄金色になるまで15〜18分焼きます。途中で天板を入れ替え、回転させます。クラッカーをワイヤーラックに移し、完全に冷まします。残りの生地2枚を伸ばして焼く前に、天板を完全に冷まします。冷めたクラッカーを大きめに割り、盛り付けます。(クラッカーは室温で最大2週間保存できます。)
