Aqueça o óleo vegetal e a manteiga numa caçarola grande com tampa no fogão, depois adicione as cebolas e uma pitada de sal. Cozinhe por 15-20 minutos até ficarem macias e douradas.
Adicione a pasta de tikka masala e os pimentões, depois cozinhe por mais 5 minutos para cozinhar a crueza das especiarias.
Adicione os peitos de frango e mexa bem para cobrir com a pasta. Cozinhe por 2 minutos, depois adicione os tomates picados, o purê de tomate e 200ml de água. Cubra com uma tampa e cozinhe em fogo baixo por 15 minutos, mexendo ocasionalmente, até que o frango esteja cozido.
Retire a tampa, misture o chutney de manga, o creme de leite fresco e o iogurte natural, depois aqueça suavemente. Tempere, depois reserve o que quiser congelar. Conservará, num recipiente hermético, no congelador por até três meses.
Espalhe o restante com folhas de coentro e sirva com arroz basmati e pão naan.
