🥩Solyanka — it is a bright and rich soup, in which meat, smoked products, pickled cucumbers and spicy spices are surprisingly combined. 🥩 Ingredients (for 6 servings): Beef on the bone (for broth) - 400 g Smoked meats (ham, sausage, bacon) - 300 g Pickled cucumbers - 3-4 pcs. Onions - 2 pcs. Carrot - 1 pc. Tomato paste - 2 tbsp. Pitted olives - 100 g Lemon - 1/2 pc. Bay leaf - 2 pcs. Black peppercorns - 5-6 pcs. Vegetable oil - 2 tbsp. Salt and pepper to taste Sour cream and herbs for serving 👩‍🍳 Preparation: Broth. Boil the beef on the bone with bay leaf and pepper for about 1.5 hours. Remove the meat, separate it from the bone and cut into cubes. Vegetables. Finely chop the onion and carrots, fry in vegetable oil. Add tomato paste and a little broth, simmer for 5 minutes. Pickles. Dice them finely and lightly fry separately (optional). Soup assembly. Add meat, smoked meats, sautéed vegetables, and pickles to the broth. Cook for another 15 minutes. Final touch. Add olives and a couple of lemon slices. Let it steep covered for 10 minutes. Serve. Serve on plates, garnish with herbs, and serve with sour cream. ✨ Solyanka 'Russian Palette' is a soup with character: thick, aromatic, and incredibly hearty.
